Only I see when I close the Palette Editor

Yes, currently this is how it works.
But its not ideal indeed so it will probably be improved in the future

In the fixture window, you can sort them in different tabs, independent of the dmx direction? (1-64, 65-128, etc.)

You mean how to delete?
Groups: Record again with no fixtures selected (or use "Knockout")
Palette: Record again with nothing in the programmer

There is no way to sort/place fixtures on different tabs manually.
